MyBacon Breakfast Chickpea Tacos featuring Fabalish Queso

Start your day with a delicious twist on breakfast! These MyBacon Breakfast Chickpea Tacos, featuring cheesey Fabalish Queso, combine smoky MyBacon with hearty chickpeas for a satisfying and flavorful meal. Perfect for mornings that call for something bold and crave-worthy!
WHAT YOU’LL NEED:
6 oz. (1 package) MyBacon
3 scallions + 2 more for garnish, finely sliced
1 clove garlic, minced
1 cup chickpea flour (also called garbanzo bean flour)
1 cup water
2 Tbsps nutritional yeast
1/2 tsp each ground turmeric, cumin, chili powder, smoked paprika, dried oregano, kosher salt
1/4 tsp cayenne pepper (or more to taste)
1 Tbsp avocado or coconut oil
4 vegan flour or corn tortillas
4 Tbsps of Fabalish Queso
Red cabbage, thinly shredded (if desired)
1 avocado, sliced
4 Tbsps salsa
1 handful fresh cilantro, chopped roughly
1 jalepeno, seeded and sliced (if desired)
1 lime, cut into wedges
WHAT TO DO:
Cook MyBacon in a large nonstick skillet following package instructions (See here for tips!), about 6 minutes. Remove from pan and cool, cut crosswise into bite-size pieces and set aside.
In a small bowl, combine the chickpea flour, water, nutritional yeast, turmeric, cumin, chili powder, paprika, oregano, salt and cayenne pepper. Stir until no lumps remain.
Heat oil in the same skillet over medium heat. Add some of the sliced scallions (reserve rest for garnish) and garlic and stir until fragrant. Add the chickpea batter and let it rest until it begins to brown on the bottom. Give it a good stir until it has scrambled texture. Add more oil if it starts to stick. Turn off heat.
Warm your tortillas and fill each with MyBacon, scrambled chickpea, shredded red cabbage, avocado, salsa, cilantro, jalapeno and drizzle with a generous spoonful of Fabalish Queso. Serve with lime wedges.
