While juggling a dual engineering degree, Eben had a light-bulb moment inspired by his childhood Vermont farm: mycelium was binding wood chips together like nature’s glue.
Intrigued, Eben teamed up with his college buddy Gavin to start Ecovative, a pioneer in mycelium innovation. They created everything from eco-friendly packaging to foam, leather, and insulation!
In 2020, Eben and his team re-imagined food tech, experimenting with gourmet oyster mushrooms and Ecovative’s patented AirMycelium farming process. The result? A tasty, planet-friendly breakthrough—a whole new crop to feed the future!
So here we are today, MyForest Foods, an Ecovative spinoff, where we turn farm-grown mycelium into delicious “whole-cut” foods.
