MyForest Foods & Carol’s Vegan Kitchen: MyBacon Biscuits

Fluffy, savory, and completely vegan—these MyBacon Biscuits are a match made in heaven! Created in partnership with Carol's Vegan Kitchen, they’re crafted with wholesome ingredients and filled with the smoky goodness of MyBacon. Perfect for sharing with the whole family!


WHAT YOU’LL NEED:

  • 6 oz. (1 package) MyBacon

  • 3/4 Cups plus 1 Tbsp Chilled Unsweetened Plant-Based Milk (and a little extra to brush over top)

  • 2 tsp Apple Cider Vinegar

  • 2 Cups All-Purpose Flour

  • 4 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Kosher Salt

  • 1/4 Cup Vegan Butter, Chilled & Cut Into Cubes


WHAT TO DO:

  1. Pre-heat oven to 450°F

  2. Cook MyBacon in a large skillet following package instructions (See here for tips!). Let cool on a paper towel, then cut into 1/4 inch bacon bits.

  3. Pour the plant-based milk into a liquid measuring cup. Add vinegar and stir to combine. Let sit. It will curdle slightly to make vegan buttermilk.

  4. In a large mixing bowl, whisk the flour, baking powder, baking soda and salt.

  5. Add the vegan butter cubes to the dry ingredients. Use your hands to crumble the butter into the dry ingredients until you have a few chunks the size of peas.

  6. Add MyBacon bits and fluff them into the mixture with your hands.

  7. Make a well in the center of the mixture and pour in the vegan buttermilk. Quickly and gently stir it all together until a sticky dough is formed.

  8. Turn the dough onto a well-floured surface. Dust the top with flour and use your hands to gently fold the dough in half and onto itself 6 times. Press the dough into a 1-inch thick rectangle.

  9. Slice dough into 6 biscuits. Transfer biscuits to a parchment-lined baking sheet. Brush the tops with plant-based milk.

  10. Bake for 20 minutes until golden on top. Serve warm and enjoy!
